I’ve been on a low cholesterol diet lately. I’ve eaten nothing but chicken and fish for the past six weeks. Admittedly, I feel a lot better. I have more energy and I don’t feel as bloated. I thought I’d share my favorite four chicken salad recipes with you. Although I wouldn’t actually call them recipes. There’s no science here. I cook a chicken breast on my grill pan on the stove, chop it up, and toss it with whatever salad ingredients I’m in the mood for.
Chopped Salad
Arugula or your choice of greens
Diced Red onion
Diced tomato
Diced Cucumber
Diced Chicken
Feta (okay I cheated with the cheese)
Bolthouse Farms Cilantro Avocado Yogurt Dressing
Mediterranean Salad
Arugula or your choice of salad greens
Chicken
Red onion
Peppers and Olives off the mediterranean bar at the grocery
Feta (oops, I cheated again)
Balsamic or whatever kind of vinaigrette
Tex-Mex Salad
Salad greens
Corn-I cut the kernels off one ear and cook them for a second in olive oil
Guacamole
Pico de Gallo
Chicken
You can add beans if you like them. Yuck.

Feta (Maybe I’m not doing so well on watching the cholesterol, after all)

Wow! That looks delicious specially the Mediterranean chicken salad. How about any paleo chicken recipe? Because I’m trying to lose weight and be slim by trying to live a Paleo lifestyle, It’s kinda hard but Im trying to get used to it. And also can you share how long will it take to cook those delicious dishes?
